Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this dark Farmstead® ale is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well. For this special selection of Edith, we conditioned the beer atop Alaka coffee from the Guji region of Ethiopia, sourced and roasted by The Coffee Collective in Copenhagen, Denmark.

Brewed September 2010, this burgundian ale was aged for 50 months in oak wine barrels. Bottled in November 2014, this beer has been nearly 6 years in the making. Six years! How quickly the landscape of the brewery, and beer has changed from a single building and with just myself and a vision to its present state. All the while, the beer we refer to as Six Years, was evolving - released to you as a symbol of our temporal existence.

Fear and Trembling is a Baltic porter brewed with malt that was hand-smoked over a blend of native woods. Originally conceived as a collaboration in our first month of operations with our former colleague, Anders Kissmeyer, this version is fermented in the traditional way, with lager yeast, and aged in both wine and bourbon barrels before bottle conditioning. The name Vigneronne Cantillon was given in 1987. This name reminds us that, while it belongs to the beer patrimony, the spontaneous fermentation, the ageing in the barrels for several years and the addition of grapes make it a distant cousin of certain white wines. In spite of its success, the Vigneronne represents less than 5% of the total production of the Cantillon brewery. I don’t know the bottle vintage but these are pretty old  (10 years+ most likely) and I hear they aged pretty well  I bought these at the time they released serendipity Severe Drought, we shared the farmer’s horror as Wisconsin’s cherry crop failed! Blend of 3 barrels of Lambic maturing in fresh emptied Vin Jaune barrels from Stephane Tissot. Two barrels were filled with wort and one with a two years old Lambic. We let it maturate for two years for the wort and one year for the Lambic. Beer bottled on 27th December 2016.Limited amount sold online

Flora is the wine barrel-aged version of Florence (1915-1967), our grandfather’s sister as well as the name of our Farmstead® wheat ale. We selected a single barrel of Flora and aged it on fresh, Vermont-grown Montmorency cherries. The result is a complex, elegant expression of the annual harvest.

Clover (2005-2014) was an uncomplicated yet complex grey cat with whom we shared an all-too-brief moment and space.
