Double BA Monatomic Pineapple - Pineapple Mead with Tahitian Vanilla aged 19 months in Pineapple Brandy and second use Sauvignon Blanc barrels.
BA Carbon Copy - Carbon Copy comprises two different peach varieties, white and yellow. To compound citrus notes, we used orange blossom honey from our favorite apiary in central FL. Fermentation was low and slow in an effort to retain as much peach aroma and flavor. Post fermentation, we sourced a peach brandy barrel that arrived still wet. A french oak barrel from Chateau Mercurey, it previously held white wine prior to holding Peach brandy.
Triple Point - Banana, White Peach, Passion Fruit Mead aged in Ex-Barleywine Blanton’s barrels for 6 months.
