Frances Blend 4 is comprised of barrel fermented and aged saison. Fermented entirely from yeast caught in South City St Louis on the fall on 2015, and isolated Brettanomyces from that same yeast capture. For the first time we blended back in Brett fermented saison with the base Frances recipe for added depth and complexity. This 4th blend consists of 50% Frances that was brewed and put into barrels on September 27th 2021, and 50% Yoo-Iss Brett Saison brewed and put into barrels on September 26th 2022. Pulled out of oak and packaged into green glass bottles and kegs on October 12th 2023 where it was been conditioning and aging since.
