When we were lucky enough to receive some Mizunara barrels from our friends at Willett, my eyes were opened to the prospect of using more exotic oaks in the future for elevated projects. Fast forward a couple of years and we have been lucky enough to start sourcing both previously use (held bourbon first) and brand new Amburana casks from Brazil. Most of you know my love for cinnamon and what makes Brazilian Amburana so unique is the soft, developed, and complex cinnamon-like notes it imparts.
For Derivation Grand Cru, there was never an attempt to make this beer, rather it became an awesome blend we discovered while checking in on our barrels. The final pick included a blend of Double Barrel Aged Stout ( Private Press collab recipe aged in Willett 5 year Bourbon Barrels and finished in NULU Amburana Barrels) and a Triple Barrel Aged Stout (Chocolate recipe aged in Willett 8 year Bourbon barrels, then rested in Lairds Apple Brandy Barrels and finished in brand new Amburana Oak Barrels). Then we gave it a final touch of some Ugandan Vanilla to round out the beer yet not take away from the exotic oak profile.
I had never planned on having a Derivation Grand Cru, but a blend of double and triple barrel aged Derivation finished in Amburana Oak with Ugandan Vanilla sure felt like the right time to use the name ;).
