Coeur de Cuvee Blend #12 - Coeur de Cuvée is a series of blends of some of our finest wine barrel fermented and aged Saisons. This twelfth release contains select barrels of Oude Fermier which were refermented on Prickly Pears and Raspberries for more than a year, then blended with a small portion of Biere Blanche and bottled with select Brettanomyces strains.
Biere Blanche - Bière Blanche is inspired by the witbiers of Belgium brewed with large amounts of wheat and spiced with coriander and orange peel. The soft palate and low bitterness of this witbier is perfect for aging in Missouri Oak with our local microflora, which added a ripe, citrus acidity to this vibrant beer. This refreshing witbier aged in a foedre for 6 months before it was naturally conditioned in this bottle.
La Ruche 10yr - La Ruche is a delicate Missouri Saison fermented using a blend of our local microflora and a traditional Saison yeast. Meadowfoam Honey was added to this soft beer for refermentation in a Missouri Oak Foedre and was aged to maturity before being naturally conditioned in this bottle.
Merci - Blended Missouri Wild Ale
Blended 2023 - Blended 2023 was blended in late 2023 and bottled in December. We always allow this beer a little longer in bottle before release as it needs it to round out the edges. The blend consists of a turbid-mashed (on 4/21/20) spontaneous beer aged in a Missouri oak foedre, our 2nd use of the PH1 barrel we let spontaneously ferment a heavy wheat malt bill on 1/18/22, a French Oak puncheon of a highly hopped Missouri Farmhouse Pale, and the final 8% of the blend was Belgian Lambic from a well known producer. We bottle conditioned this blend with Brettanomyces Bruxellensis and our House Side Project Brettanomyces to finalize this complex blend and beer.
