HIGHLAND PARK/CELLARMAKER:

Dream Sleep is a barrel-aged barleywine made in collaboration with Cellarmaker. For this beer we wanted to create a malt bill similar to the profile of Cellarmaker's barleywines, so we used all CA grown @admiralmaltings.

The blend consists of 3 barrel components including:

Barleywine aged in an Applewood stave bourbon barrel for 10 months
Barleywine aged in a Woodinville bourbon barrel for 30 months
Barleywine aged in a Bardstown bourbon barrel for 15 months

You'll experience notes of toffee & caramel with a touch of spirit, chocolate, & coffee with each sip.

HIGHLAND PARK/WINDSOR HOMEBREW SUPPLY:

Collab w/Windsor Homebrew Supply. -Barleywine aged for 11 months in a Heaven Hill bourbon barrel.

Barleywine aged for 11 months in a Ginja barrel that previously held Woodinville bourbon.
Also a small piece of what became the Old Youth blend that had been aging in stainless.
