Derivation 17

Derivation Blend #17 is a blend of Willett Bourbon and VSOP Cognac barrel aged O.W.K. and Vibes recipes which matured from 24 to 40 months in these barrels. The final blend was then finished on vanilla beans from Sri Lanka and Tanzania. 

For years, we have treated our use of vanilla beans like IPA brewers treat their hops. Finding perfect blends, complementary pairings, and transformative expressions from different varietals and our uses for them. The vanilla is explosively aromatic, with a nutmeg/eggnog warmth and a deep, round, lasting bourbon complexity.

Derivation 18

Blend of Bourbon and Rum Barrel Aged Imperial Stouts finished with Sump Coffee, Mexican and Ugandan Vanilla Beans and Coconut Flakes.

For Cory

Blend of Barrel Aged ales in honor of Cory King of Side Project. 

Blend consists of:

Triple Oaked Deal with the Devil (Bourbon, bourbon, bourbon)

Triple Oaked Deal with the Devil (Bourbon, Bourbon, Cognac)

Triple Oaked Wendigo (Bourbon, Bourbon, Bourbon)

Double Oaked Double Dark Ale (Rye, Bourbon)

For LC

For LC is a Double Barrel-aged Imperial Stout with Mexican Vanilla Beans, Cocoa Nibs, Cinnamon Sticks and Ancho Chilis. Following a 30 to 42-month aging period in Blanton's and Weller 12 barrels, we combined and further aged the blend on the adjuncts. Striving for a multi-dimensional experience, we returned the blend to barrels post-adjunct addition, a first for us. For this second aging phase, we selected Willett Rye and Artifact Honey Bourbon Barrels to complement the adjuncts and evoke flavors reminiscent of Derivation Blend 6. After a final 7-month rest in these barrels, we added a touch more vanilla to perfect the blend.

Double Barrel Anabasis 10 Year

After aging for 2 years in bourbon barrels, we chose a few, exemplary barrels of mature Anabasis to finish in our favorite Willett Bourbon barrels and let age until we felt as though the blend was ready to share with you. We hope you enjoy this very limited expression of Double Barrel Anabasis - 10 Year.

A blend of Barrel-Aged Imperial Stouts (O.W.K., Derivation Blend #3 & our Vibes recipe) aged in Willett 5 year Rye barrels, Willett 4 year Rye barrels and Still630 4 year Rye barrels.
