We reach the very final release of the current Deep Wood slate: Barleywinery D.B.V.S.O.J. The grace note to an overwhelming cacophony of big-hitter beers, coming at just the right time to soothe a populace battered by sub-zero mornings on Lake Michigan. A beer so singular we had to build a whole Barleywinery for it.
But what does "Barleywinery" mean, exactly? Glad you asked. Settle in.
The Barleywinery is a separate barrel stack setup in our brewery informed by the time @v.s.o.marty spent on sabbatical out west stomping grapes and getting into wine-adjacent mischief. This change of perspective gave him new insights into oxidation and evaporation behavior in barrels, and its influence over how beers age and what they age into. At it most basic, Barleywinery beers show brighter, fresher malt character, and clearer, louder aromas, flavors, and textures than we were able to achieve in the past. The Barleywinery has set the tone for our overall Deep Wood Series approach.
Of course, this would be a whole lot of fuss for nothing if it didn't bring our most precious Barleywine to a whole new level. But you're in luck there.
Barleywinery D.B.V.S.O.J. is a single, unblended batch of extra sweet component Straight Jacket aged a year in young Heaven Hill rye and bourbon barrels before a transfer over to French-oak-augmented 1792 Sweet Wheat casks for an additional year.
Compared to previous V.S.O.J. vintages, and the letters we sometimes put before them, this one has a smoother malt sweetness, especially considering how much time it spent aging. It's a mix of "this tastes very fresh" and "I bet this has been aged forever." Light vanilla, toffee from a banged-up hand me down tin, and a sweetness that remains luscious but never approaches cloying. And, exclusive to this vintage, a welcome warmth of ABV and tannic traction from all that carefully considered barrel time. All floating on an ethereal body that softly carries each flavor and aroma from your palate to the very depth of your bones and back. 16.5% ABV (19.2oz can). Note: The can ABV reads 14%. The correct ABV is 16.5% (per Revolution note in Untappd description).
