Wilderness of History Triple Barrel Barleywine aged in Bourbon and Cognac barrels 18.7% ABV
We arrive in the year 2025 with a commanding statement. This triple barrel variant is the result of Wilderness of History, our double barrel barleywine first released in December 2023, experiencing an additional stay in Cognac barrels for a final surge of complexity. This beer exemplifies how wood, age, and spirit makers affect beer in different stages. The first round of aging in Weller barrels yielded a sweet barleywine with the characteristic honey-molasses flavor often found in the style. The second round aged in Russell's Reserve barrels upped our ABV considerably, offering more alcohol to balance the sweetness and lots of chocolate and caramel flavors, which complement the fruit medley and honey flavors already present. A final residence in French OakCognac barrels blend in complex tannin and oak flavor to round out the final drinking experience.
A dark, ruby brown touts aromas of oak, specialty truffles, and a grab of dried cherry, pitted date, and yellow raisins. The exact hope of warm alcohol resting tastefully in the pocket of measured recipe and process. We aimed for the impression of Cognac, so we carbonated this edition significantly lower than typical. Let it warm, pour hard, and let it ease you down from the holiday hustle. Rest easy with Wilderness of History Triple Barrel Barleywine. 18.7% ABV (12oz can)
