Description

One can of Fox Farm Echos IPA -- Jan 7th

Returning for the first time in over two years is Echos - our Baltic Porter with local honey aged in bourbon barrels and stainless steel. The beer starts with a complex blend of base and specialty malts from a range of our suppliers (spanning Germany, the UK and the US) and is hopped with some favorite German varietals. At whirlpool we added Japanese knotweed honey from Stonewall Apiary - we’ve never encountered honey so dark and robustly flavorful (earthy/nutty/malty). It was fermented low and slow with our lager yeast and is well-attenuated. After time spent in our lagering tank we transferred a portion (~60%) to 12-Year Wild Turkey and Barton 1792 bourbon barrels where it rested for 10-months. Once again, folks can expect a drinkable but complex beer highlighted by dark fruit, baker’s chocolate and tasteful barrel character.
