Time Before is a barrel-aged imperial winter ale aged in a blend of Heaven Hill Bourbon barrels for 21-24 months. We weaved together multiple threads to truly create a Bourbon lover's beer. We do this by working backwards and selecting raw materials and customizing our recipes with specific barrels in mind. When we went about setting the blend for this beer, we selected base beers that displayed intense notes of molasses, candied pecan, and caramel apple crisp. For this year's interpretation of Time Before, the chosen barrels bring forth layers of earthy vanilla, leather, and cinnamon bark that sit in the backdrop initially, but come out as the beer warms.
